  1. Heat the olive oil in a small saucepan
  2. Add the chicken fillets and cook until golden on all sides.
  3. Add the red peppers and fry for two minutes
  4. Add the wine, turn up the heat and bubble for one minute.
  5. Stir in the double cream and season. Cook for one minute, or until the chicken is cooked through.
  6. Pour into a serving bowl and serve
